1/2 cup butter (slightly warmed or room temp) 1 cup firmly packed brown sugar 1/2 cup white (granulated) sugar 2 large eggs 2 tsp vanilla 2 cups all-purpose flour 1 tsp baking soda 1 cup + semi sweet chocolate chips/chunks Cream the butter and brown sugar until well mixed and slightly lightened in colour. Cream in the white sugar until well blended. You want to feel the sugar crystals but not necessarily see all the grains. Beat in the eggs and vanilla. Wait until the mixture lightens a bit. Mix the flour and baking soda separately to make sure the soda is incorporated. Chunks of it will give tinny tasting spots in the cookies. Once you add the flour only mix it to combine everything or it will get too tough. Add any chips or other morsels. I've been added candied ginger pieces lately at request from the boys. Drop small spoonfulls onto a cookie sheet. Bake at 350 for approx 10 min. Depending on the oven they can be done as early as 8 or need as much as 12. Play it by looks/smell/patience. :) No matter how many the recipe says, I always get less. Happy baking! j
